Limpets with Afonso sauce

Ingredients

  • 2 kg of live soft limpets with moss
  • 1 large onion
  • 2 garlic cloves
  • 1 bunch of parsley
  • 1 dl of olive oil
  • 1 sweet or spicy Dona Pimentinha red pepper
  • Salt
  • Pepper

Preparation

  1. Wash the limpets;
  2. Chop onion and garlic and pass through olive oil, without browning;
  3. Add red pepper and chopped parsley and season with salt and pepper;
  4. Put the limpets on and let them cook quickly (do not let them cook for a long time, as they can get hard);
  5. Shake the pan, without stirring with the spoon;
  6. Ajust the seasonings to your preference.
