Azorean tuna steak

Bife de atum dos açores


  • 700 gr of very fresh tuna
  • 1 tablespoon of vinegar
  • 1 bay leaf
  • 1 bunch of parsley
  • Dona Pimentinha Ground pepper
  • Dona Pimentinha chilli sauce
  • 5 cloves of garlic
  • 1 teaspoon of toasted flour
  • 2 dl of white wine
  • Olive oil


  1. Cut the tuna into thin steaks and place them in a container;
  2. Add the chopped garlic, bay leaf, parsley, white wine, vinegar, pepper and chilli (piri-piri);
  3. Leave to marinate for about three hours;
  4. Remove the steaks, dry them on a cloth and fry them in oil;
  5. Add the marinade and the flour (undone in little water);
  6. Bring to a boil.
