Azorean-style fried cod

Ingredients

  • 400g of cod
  • 8 potatoes / yam
  • 2 dl of olive oil

For the sauce:

  • 6 garlic cloves
  • 2 Dona Pimentinha salted chili peppers
  • 1 tablespoon of tomato paste
  • 2 tablespoons of vinegar
  • 3 dl of olive oil

Preparation

  1. Cook (optional) the cod, then fry it in olive oil;
  2. Sauté the chopped garlic and pepper, with the oil and the tomato paste in a frying pan;
  3. Before cooling, add the vinegar. Cover the cod with this sauce, accompanied by potatoes or yams.
